Basic Stir-Fry
1 pound chicken, shrimp, lamb or lean beef ¼ cup no-salt-added chicken broth 2 cups mushrooms, thinly sliced 1 cup bamboo shoots 1 cup water chestnuts 1 cup broccoli florets 1 cup asparagus, coarsely chopped 1 carrot, thinly sliced 1 teaspoon ginger ¼ teaspoon cayenne pepper
Heat the broth in a nonstick skillet over medium-high heat. Add your protein and heat until almost completely cooked. Add the veggies and seasonings and stir to combine; cook until tender.

Burgers with Herbs
1½ pounds lean ground beef 1 tablespoon dried mustard 2 garlic cloves, minced 1 teaspoon cayenne 1 tablespoon fresh cilantro, chopped
Preheat the broiler. Combine all ingredients and shape into patties. Place in the broiler on a nonstick broiler pan until cooked through.

Variations: For phase 2, add 1/2 teaspoon of mint to replace the cayenne. For phase 3, substitute dried horseradish for the mustard.

Shepherd's Pie
1 pound lean ground beef 1 medium onion, chopped 4 garlic cloves, minced 1 green pepper, chopped 1 cup sliced mushrooms 1 teaspoon cayenne ½ teaspoon onion powder ½ teaspoon garlic powder 2 small carrots, grated 12 black olives, chopped Handful of fresh cilantro 1 (8-ounce) can no-salt-added tomato sauce 1 (14½ ounce) can no-salt-added diced tomatoes 2 cups mashed cauliflower
Preheat oven to 350°F. In a large, nonstick skillet, brown ground beef, onion, and garlic. When beef is nearly done, add red pepper, mushrooms, cayenne, onion powder, and garlic powder. When beef is no longer pink, transfer to a large casserole dish. Add carrots, olives, cilantro, tomato sauce, and diced tomatoes to casserole dish and mix well. Spread mashed cauliflower over the top. Bake in oven for 30 minutes. Place under broiler for 3 minutes or until browned on top.

Makes 4 servings
Garlicky Beef, Broccoli & Cauliflower Stir Fry
½ cup no-salt-added beef broth 7 garlic cloves, minced and divided in half olive oil spray 1 lb lean beef round tip steak, sliced thin across the grain 4 green onions, chopped 2 bundles of broccoli, chopped 1 head cauliflower, chopped
Heat ¼ cup of beef broth and half of the garlic in a large skillet or wok over medium-high heat. Add the beef and cook for 5-8 minutes, until browned; remove and place to the side. Add remaining beef broth to skillet and reduce heat to medium. Add broccoli and cauliflower and cook for about 5 minutes. Add beef back into the skillet, along with the remaining garlic. Mix until heated through and combined. Garnish with green onions.

Makes 6 servings
Stuffed Peppers
Olive oil spray 1½ pounds lean ground beef 1 onion, finely chopped 1 egg 1 cup Fat Flush Salsa 3 bell peppers (red, orange, yellow or green)
Preheat oven to 350°F. Spritz a medium baking dish with the olive oil spray. Cut the tops off of the peppers and clean out the seeds; set aside. In a bowl, mix the beef, onion, egg, and ½ cup of salsa. Stuff the peppers with equal amounts of the meat mixture. Arrange them in the baking dish, and top with the remaining salsa. Bake, uncovered, for 1 hour until peppers are soft and meat is cooked.
