Hot n’ Sour Shrimp & Vegetable Soup

Hot n' Sour Shrimp & Vegetable Soup

Ingredients
  

  • 5 cups no-salt-added chicken broth
  • 1/4 cup raw apple cider vinegar
  • 1/3 teaspoon cayenne
  • 1/4 teaspoon ground ginger
  • 1 pound raw shrimp peeled and deveined
  • 1 1/2 cup radishes sliced
  • 1 1/2 cup spinach shredded
  • 2/3 cup scallions sliced
  • 1 cup Enoki mushrooms for garnish optional

Method
 

  1. Bring broth to a boil in a large soup pot.
  2. Stir in vinegar, cayenne, and ginger.
  3. Add shrimp and cook until shrimp turn pink and curl, about 3-4 minutes. Remove from the heat.
  4. Stir in radishes, spinach, and scallions.
  5. Cover and let stand 2-3 minutes before serving.
  6. Garnish with Enoki mushrooms.

Spinach Stuffed Mushrooms

Ingredients
  

  • 1 10- ounce package frozen spinach thawed and drained
  • 1 egg yolk
  • 1 garlic clove minced
  • 12 large white mushrooms cleaned and stemmed

Method
 

  1. Heat oven to 350ºF.
  2. Spray a small baking sheet with nonstick cooking spray.
  3. In a large bowl, mix spinach, egg yolk, and garlic.
  4. Stuff each mushroom with spinach mixture and place on baking sheet.
  5. Bake for 15-20 minutes or until mixture is firm to the touch.
  6. Serve hot.

Jicama Salad

Jicama Salad

Ingredients
  

  • 12 ounces jicama peeled and cut into thin strips
  • 1 red onion thinly sliced
  • 1 carrot grated
  • 1 cucumber cut into thin strips
  • 1 cup parsley chopped
  • 1/2 cup apple cider vinegar
  • 1/2 teaspoon dill
  • 3 tablespoons flaxseed oil
  • 3 garlic cloves minced
  • Juice of 1 lemon

Method
 

  1. In a large bowl, place jicama, onion, carrot, and cucumber and set aside.
  2. In a jar, put parsley, vinegar, dill, flaxseed oil, garlic, and lemon juice; shake well.
  3. Pour the dressing over the jicama mix and toss lightly.

Ingredients
  

  • 4 cups cauliflower florets
  • 4 cups broccoli florets
  • 2 tablespoons apple cider vinegar
  • 4 tablespoons flaxseed oil
  • 1 garlic clove minced
  • 2 tablespoons scallions finely chopped
  • ½ teaspoon dried mustard

Method
 

  1. In a steamer, place the cauliflower and broccoli and steam until just under-cooked, about 6 minutes.
  2. Transfer to a bowl and let cool.
  3. In a small bowl, blend vinegar, oil, garlic, scallions, and mustard.
  4. Pour the dressing over the cauliflower and broccoli; toss to coat.

Cherry Cinnamon Smoothie

Ingredients
  

  • 8 ounces water
  • 1 scoop Fat Flush Body Protein or Whey Protein
  • 10 seedless cherries
  • 1/8 tsp ground cinnamon
  • 1 tablespoon flaxseed oil
  • 1 tablespoon flax or chia seeds
  • Ice cubes optional

Method
 

  1. Combine fruit, water and powder in a blender until smooth.
  2. Add the flaxseed, cinnamon and chia seeds.
  3. Blend until all ingredients are thoroughly incorporated.

*Notes:
If you prefer softer chia seeds, add the seeds and water to the blender first; let sit for 1-2 minutes.
