Very Veggie Soup
Recipe type: Soup
- 2 cups no-salt-added Vegetable Broth
- 1 zucchini, sliced
- 2 carrots, sliced
- 1 celery stalk, sliced
- ½ tablespoons fresh parsley or coriander, for garnish
- Combine all ingredients in a medium pot; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until vegetables are tender.
For a smoother soup, puree the soup in a blender.
