Instructions
  1. Simply cut up mirepoix vegetables – celery, carrot, and onion or shallots – into small chunks and place in the bottom of the pan you’re roasting the turkey in. I also like to add peeled garlic cloves and a few slices of tart green apple for more depth of flavor. Once the turkey is done, scoop the soft, roasted vegetables out and puree in the blender. Use as much of this pureed vegetable mix as needed to thicken the turkey juices into a rich, flavorful gravy. Add seasonings to taste.

Serves: 3 servings
Ingredients
  • 1 onion, chopped
  • 1 clove of garlic, minced
  • 4 stalks celery, thinly sliced
  • ½ red pepper, chopped
  • ½ green pepper, chopped
  • 4 cups low sodium chicken stock
  • 12 ounces winter squash, cooked and pureed
  • ½ cup fresh cilantro, chopped
  • 3 boneless skinless chicken breasts, thinly sliced
  • 1 tablespoon Fat Flush Curry seasoning (Fat Flush Cookbook, pg. 204)
  • Juice of one lime
  • Cayenne to taste
Instructions
  1. Spritz soup pot with olive oil spray and briefly saute onion, garlic, celery, red pepper and green pepper.
  2. Add chicken stock, squash and cilantro to pot and simmer.
  3. Add chicken breast slices to soup pot along with curry seasoning, lime juice and cayenne.
  4. Simmer until chicken is cooked through.
  5. Phase 3 variation: Top with toasted almond slices or organic shredded coconut.

Serves: 4 servings
Ingredients
Taco Seasoning
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 2 teaspoons ground oregano (phase 3)
  • 2 teaspoons onion powder
  • ¼ teaspoon cayenne
  • Combine all ingredients in a bowl and mix well.
Taco Meat
  • 1 lb lean ground beef or ground turkey
  • 1 medium onion, diced
  • ½ red bell pepper, diced
  • Taco seasoning, as desired
  • 1 tablespoon fresh cilantro, chopped
Instructions
  1. Spray a skillet with olive oil spray. Add onions and bell peppers and cook until soft, about 2 to 3 minutes. Add in ground beef or turkey and cook mixture until half way done. Add ½ of the taco seasoning mixture. Cook until meat is cooked through. Finish with chopped cilantro, stirring it through.
  2. To serve, take ¼ of the taco meat and sprinkle over the top of your favorite salad which might include romaine lettuce, sliced onions, tomatoes, avocado/guacamole, bell peppers, green onions, black olives, tomatillos. Dress with your favorite FF friendly dressing or salsa.
  3. Phase 3 Variation: Add black beans and/or blue corn chips or top with a dollop of plain greek yogurt.

 

White Chicken Chili

Serves: 4 servings
Ingredients
  • olive oil spray
  • 2 pounds boneless, skinless chicken breasts
  • 2 cans Shelton's low sodium chicken broth
  • 1 small onion, diced
  • 3 carrots, sliced
  • 3 stalks celery, thinly sliced
  • 3 jalapeno peppers, roasted and diced
  • 2 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon cayenne
  • 2 tablespoons parsley, fresh or dried
  • ½ cup fresh cilantro
  • 2 sweet potatoes, peeled and cubed
  • juice of 1-2 limes
Instructions
  1. Spritz a large skillet with olive oil spray. Warm over medium heat and add chicken breasts, cooking 4 to 5 minutes per side until both sides are browned and chicken is completely cooked. Set aside to cool.
  2. Using same skillet, add another sprtiz of olive oil spray. Reheat the pan and add onion, garlic, carrots and celery. Saute until slightly soft.
  3. Once chicken is completely cooled, shred the meat.
  4. In a soup pot, add broth, shredded chicken, sauteed vegetables, diced, roasted jalapeno, dry spices and fresh herbs. Bring mixture to boil, then lower heat and simmer for 30 minutes. Adjust seasonings to taste and cook for another 15 minutes. Add sweet potatoes to pot and continue cooking until soft.
  5. Right before serving, add lime juice and stir. Serve and enjoy!
