Chicken & Bok Choy Soup

Chicken & Bok Choy Soup
Recipe type: Soup
Serves: 4 servings
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups water
  • 4 teaspoons chicken broth
  • 4 carrots, sliced
  • 8 large bok choy ribs with leaves, finely chopped
  • 4 stalks broccolini, chopped into 2-inch pieces
  • 2 boneless, skinless chicken breasts, cut into ½-inch cubes
  1. Spritz the bottom of large pot with olive oil spray and saute onion and garlic over medium heat until onion is softened and translucent.
  2. Add water, chicken broth, carrots, bok choy, and broccolini; bring to a boil. Reduce heat and simmer until vegetables are slightly tender, about 10 minutes. Add chicken; continue simmering until chicken is no longer pink in the center, about 10 minutes.

    Hi,In the Chicken Bok Choy soup recipe it calls for 4 teaspoons chicken broth.For flavor I’m assuming it would be a concentrate like “better than bouillon”or is it just straight chicken stock? Love the Fat Flush soup 🙂

    What is broccoloini, where can I buy it? Or is it simply the tops of broccoli?

      Hello Mrs. M! Broccoloini is a green vegetable similar to broccoli but with smaller florets and longer, thin stalks. Most of the time can be found at your local Whole Foods Market, it’s peak season is from October to April. Hope this information was helpful!

    When I do this diet I do absolutely no salt so Im going to skip the broth in this. Wont taste as good but need to do this strictly for 2 days of no salr.
