Citrus Salmon with Asparagus

Citrus Salmon with Asparagus

Ingredients
  

  • 4 5-ounce salmon fillets
  • Olive oil spray
  • 1/2 medium onion minced
  • 1 pound asparagus cut diagonally into 1/2-inch pieces
  • 1/2 cup no-salt-added vegetable broth
  • 2 tablespoons fresh dill
  • 1 lemon cut into wedges

Method
 

  1. Heat a pan over medium-high heat.
  2. Spritz fish with olive oil spray and cook in the pan for about 4 minutes, flip and cook on the other side for about 4 minutes.
  3. Remove from the heat and set aside.
  4. Using the same pan, heat broth over medium; add onions and asparagus.
  5. Saute until vegetables are tender.
  6. Add fresh dill and spritz with lemon juice.
