Friendly Italian Wedding Soup

  • 1 pound lean ground beef
  • 2 tablespoons garlic, minced
  • 2 teaspoons fresh parsley, chopped
  • ¼ cup diced onion
  • 4 cups no-salt-added beef broth
  • 1 carrot, chopped
  • 1 cup spinach, chopped
  • Fresh garlic, minced (for garnish)
  1. Combine the beef, garlic, parsley, and onion together.
  2. Shape into ½-inch meatballs.
  3. Brown the meatballs in a nonstick skillet over medium heat, until cooked through; set aside.
  4. Pour broth into a large pot and add the chopped carrot; bring to a boil.
  5. Reduce the heat, add meatballs; cover and let simmer for about 20 minutes.
  6. Add the spinach and simmer for 15 minutes longer.
  7. Garnish with the fresh garlic.
