Serves: 1 cup
- ½ cup English cucumber, diced
- ½ cup canned hearts of palm, well rinsed and thinly sliced
- 1 small tomato, seeded and diced
- ¼ cup apple cider vinegar
- 2 tablespoons green onions or scallions, chopped
- ⅛ teaspoon Sweetleaf stevia
- Mix well and let stand at least 5 minutes or cover and chill up to one day. Serve with a slotted spoon.
