Cucumber Relish
Serves: 1 cup
 
Ingredients
  • ½ cup English cucumber, diced
  • ½ cup canned hearts of palm, well rinsed and thinly sliced
  • 1 small tomato, seeded and diced
  • ¼ cup apple cider vinegar
  • 2 tablespoons green onions or scallions, chopped
  • ⅛ teaspoon Sweetleaf stevia
Instructions
  1. Mix well and let stand at least 5 minutes or cover and chill up to one day. Serve with a slotted spoon.
