Baked Turkey Roll-Ups

Ingredients
  • 4 (5-ounce) turkey breast cutlets
  • ½ red pepper, julienned
  • 1 carrot, julienned
  • ½ small zucchini, julienned
  • ½ small yellow squash, julienned
  • 1 scoop Fat Flush vanilla Whey Protein Powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried mustard
  • 1 egg, beaten
  • Juice of ½ lemon
Instructions
  1. Preheat the oven to 400°F.
  2. Pound the turkey cutlets between plastic wrap to ¼-inch thickness.
  3. In a medium bowl, combine the red pepper, carrot, zucchini, and yellow squash and mix well.
  4. Place a quarter of the veggie mixture at the end of each turkey cutlet and roll up; secure with a toothpick.
  5. In a small bowl, combine whey powder, cumin, garlic powder, onion powder, and dried mustard.
  6. Dip rolled-up turkey cutlet in egg and then roll in the whey powder mixture.
  7. Place the turkey cutlets in a nonstick baking pan and place in the oven for 15 minutes or until the meat juices run clear.
  8. Drizzle lemon juice over the cutlets and serve.

*Notes: Remember to include ingredients when calculating daily intake allowance.
