Stuffed Peppers

Ingredients
  • Olive oil spray
  • 1½ pounds lean ground beef
  • 1 onion, finely chopped
  • 1 egg
  • 1 cup Fat Flush Salsa
  • 3 bell peppers (red, orange, yellow or green)
Instructions
  1. Preheat oven to 350°F.
  2. Spritz a medium baking dish with the olive oil spray.
  3. Cut the tops off of the peppers and clean out the seeds; set aside.
  4. In a bowl, mix the beef, onion, egg, and ½ cup of salsa.
  5. Stuff the peppers with equal amounts of the meat mixture.
  6. Arrange them in the baking dish, and top with the remaining salsa.
  7. Bake, uncovered, for 1 hour until peppers are soft and meat is cooked.

Variations: Add 1 cup chopped/sliced mushrooms! Try cutting the peppers lengthwise, as well, to make “boats.”
