Zucchini Ribbons

Zucchini Ribbons
Recipe type: Side Dish
  • ¼ cup no-salt-added vegetable broth
  • 2 zucchini
  • 1 garlic clove, minced
  1. Cut the ends off the zucchini, then cut lengthwise into thin strips.
  2. Heat the broth in a nonstick skillet over medium heat.
  3. Add the garlic and sauté until translucent; about 2-3 minutes.
  4. Add the zucchini and sauté until cooked through; about 4-5 minutes.

*Note: Remember to include ingredients when calculating daily intake allowances.
