Zesty Green Beans

Ingredients
  • Olive oil spritz
  • 6 cups fresh green beans, trimmed
  • 1 large red onion, thinly sliced
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 teaspoons freshly squeezed lemon juice
  • ¼ teaspoon fresh lemon zest
Instructions
  1. Preheat oven to 350°F.
  2. Steam green beans in a large pot until crisp and bright green, about 5 minutes.
  3. Remove from heat, pat dry and place in a casserole dish.
  4. In a large skillet, heat the olive oil and sauté onion, garlic, thyme and basil until onions become translucent, about 10 minutes.
  5. Add mixture to the green beans and mix well.
  6. Add lemon juice and lemon zest.
  7. Cover and bake for 15 minutes.
  8. Serve warm.
