Gazpacho
 Recipe type: Soup
 Ingredients
 - 4 tomatoes, peeled, seeded, and coarsely chopped
 - ½ cup onion, chopped
 - ½ cucumber, peeled, seeded, and chopped
 - ½ green pepper, seeded and chopped
 - 1 garlic clove, minced
 - 2 tablespoons flaxseed oil
 - 3 tablespoons apple cider vinegar
 - ½ cup cold purified water
 - 2 tablespoons fresh parsley
 
Instructions
 - Place all ingredients in a blender or food processor.
 - Blend until smooth.
 - Serve in chilled bowls.
