Gazpacho

Course: Soup

Ingredients
  

  • 4 tomatoes peeled, seeded, and coarsely chopped
  • 1/2 cup onion chopped
  • 1/2 cucumber peeled, seeded, and chopped
  • 1/2 green pepper seeded and chopped
  • 1 garlic clove minced
  • 2 tablespoons flaxseed oil
  • 3 tablespoons apple cider vinegar
  • 1/2 cup cold purified water
  • 2 tablespoons fresh parsley

Method
 

  1. Place all ingredients in a blender or food processor.
  2. Blend until smooth.
  3. Serve in chilled bowls.
