Dill Shrimp Salad

Ingredients
  

  • 4 asparagus stalks trimmed and cut into 1/2-inch pieces
  • 1/4 cup Basic Fat Flush Salad Dressing
  • 1 1/2 teaspoons fresh dill
  • 1/2 pound cooked shrimp
  • 1 1/2 cups cherry tomatoes halved
  • 4 scallions or green onions diced
  • 4 cups mixed greens or spinach thoroughly rinsed

Method
 

  1. Steam the asparagus and set aside.
  2. In a small bowl, whisk salad dressing and dill together.
  3. In a large bowl, add asparagus, shrimp, tomatoes and scallions.
  4. Drizzle with the dill dressing mix and toss to coat.
  5. Cover and refrigerate.
  6. Serve over greens or spinach.
  7. Garnish with lemon.
