Crab Cakes in a Flash

Ingredients
  

  • Olive oil spray
  • 1 pound crabmeat picked over, rinsed, and drained
  • 1/2 medium onion chopped
  • 2 tablespoons seeded and chopped bell pepper
  • 2 tablespoons chopped celery
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic minced
  • 1 tablespoon fresh lemon juice or lime juice
  • 1 large egg beaten
  • Pinch of cayenne or to taste

Method
 

  1. Preheat the oven to 350°F.
  2. Lightly coat a baking sheet with a spritz of olive oil spray.
  3. In a large bowl, break up the crabmeat with a fork; mix in the rest of the ingredients.
  4. Shape the mixture into 8 patties and place on the baking sheet.
  5. Bake the crab cakes for about 15 minutes, or until nicely browned and cooked through.
