Recipe type: Side Dish
Serves: 2 large servings
- 1 large head cauliflower
- Wash cauliflower and remove leaves and core. Break up head into florets.
- Put a few at a time into the food processor and pulse until florets resemble rice grains. Transfer to a bowl and continue with the rest of the cauliflower.
- Heat a wok or large skillet over medium heat and spray with olive oil spray. Add cauliflower rice and cook until grains are tender and hot but not mushy, tossing them frequently to prevent sticking.
- Serving suggestions: Add scrambled egg and chopped green onions for a simple fried rice lunch or use as a side dish or rice "replacement" with your favorite recipes.
