Black Bean Cakes

Ingredients
  • Olive oil spray
  • ½ cup chopped red onion
  • ¼ cup chopped celery
  • ¼ cup seeded and chopped red bell pepper
  • ¼ seeded and chopped green bell pepper
  • 2 garlic cloves, minced
  • 1 jalapeno, seeded and chopped
  • 2 teaspoons fresh lime juice
  • ⅛ teaspoon cayenne, or to taste
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground coriander
  • 1 tablespoon dried parsley
  • ¼ teaspoon salt (optional)
  • 2 (14-ounce) cans of black beans, drained and lightly mashed
  • 1 large egg
  • ¼ cup chia seeds
Instructions
  1. Preheat the oven to 375°F.
  2. Coat a saute pan with a spritz of olive oil spray and heat over medium heat.
  3. Saute the veggies until they are softened and being to brown; spoon into a large bowl.
  4. Stir in the remaining ingredients and mix well.
  5. Form the mixture into 8 equal-size patties.
  6. Place the patties on a lined baking sheet and bake for about 15 minutes, or until heated through.

*Note: Remember to include ingredients when calculating daily intake allowances.
