Artichoke Soup

Course: Soup

Ingredients
  

  • 1 small onion chopped
  • 3-4 cloves garlic chopped
  • 1 can artichokes drained, rinsed and chopped
  • 2 cups broth or stock
  • 1 teaspoon parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano

Method
 

  1. Saute onion and garlic in a pan spritzed with olive oil spray until browned. Add remaining ingredients and simmer for one hour. Remove from heat and enjoy!
