Artichoke Soup

Ingredients
- 1 small onion, chopped
- 3-4 cloves garlic, chopped
- 1 can artichokes, drained, rinsed and chopped
- 2 cups broth or stock
- 1 teaspoon parsley
- ½ teaspoon basil
- ½ teaspoon oregano
Instructions
- Saute onion and garlic in a pan spritzed with olive oil spray until browned. Add remaining ingredients and simmer for one hour. Remove from heat and enjoy!
