Sauteed Kale

Course: Side Dish

Ingredients
  

  • 1 1/2 pounds young kale stems and leaves coarsely chopped
  • Olive oil spray
  • 2 cloves garlic finely sliced
  • 1/2 cup no-salt-added vegetable stock or water

Method
 

  1. Spritz a large saute pan with the olive oil spray and heat over medium-high heat.
  2. Add the garlic and cook until soft and translucent.
  3. Raise heat to high and add the stock and kale; toss to combine.
  4. Cover and cook for 5 minutes.
  5. Remove cover and continue to cook, stirring until all the liquid has evaporated.
