Cilantro-Lime Vinaigrette
- ½ cup scallions, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- ½ teaspoon dried mustard
- 2 tablespoons flaxseed oil
- Combine scallions, lime juice, cilantro, and mustard in a medium bowl.
- Whisk in flaxseed oil.
- Use immediately or refrigerate in a small jar for up to 4 days.
