Artichoke & Hearts of Palm Salad
- 1 (14-ounce) can artichoke hearts, rinsed and drain
- 1 (14-ounce) can hearts of palm, rinsed and drained
- 1 garlic clove, minced
- ¼ cup flaxseed oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 cup minced fresh parsley
- Cayenne (to taste)
- In a medium size bowl, toss all ingredients together.
- Refrigerate for 1 hour prior to serving.
