Homemade Tomato Soup

Ingredients
  • 1 (28-ounce) can diced tomatoes
  • ½ purple onion, chopped
  • 4 garlic cloves
  • 2 cups no-salt-added vegetable broth
  • 4-5 fresh basil leaves, thinly sliced
Instructions
  1. In a large pot over medium heat, add ¼ cup of vegetable broth and saute the onion and garlic until soft and translucent.
  2. Add the tomatoes and saute together for 2-3 minutes, until the tomatoes are warmed through.
  3. Add the rest of the broth; cover and let simmer 15-20 minutes, stirring occasionally.
  4. Use an immersion blender or transfer the tomato mixture to a food processor/blender to liquefy the soup.
  5. Once smooth, return the soup to the stove.
  6. Add the basil and let simmer for another 5-10 minutes.
