Creole Catch-of-the-Day

Ingredients
  • Olive oil spray
  • ¼ cup chopped onion
  • ¼ cup chopped green bell pepper
  • 1 garlic clove, minced
  • 1 (14½-ounce) can no-salt-added chopped tomatoes
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon dried basil
  • Cayenne, to taste
  • 4 fish fillets (snapper, tilapia, etc.)
Instructions
  1. Spritz oil in a large skillet over medium-high heat until hot.
  2. Add the onion, green bell pepper, and garlic; sauté until tender.
  3. Add tomatoes, vinegar, dried basil, and cayenne; bring to a boil.
  4. Add fillets, spooning tomato mixture over the fish.
  5. Reduce heat; cover and let simmer until the fish flakes easily, about 12 minutes.
